I am still trying to wrap my head around regex’s for nagiosgraph and nagiosstat.
I have been google’ing for a few days now, can anyone point me to some resources that may help me out?

Try using something like /usr/bin/kregexpeditor that should be included in your linux kdesktop install.
You can practice with it.
